2chicken breasts boneless and skinless, cut into 1 inch cubes
8strips of bacon
½cupbrown sugar
1tbsponion powder
2tbspchili powder
½tspcumin
1tbspRed pepper flakes (optional, adjust to your liking)
1tbspparsley for garnish (optional)
Instructions
Prep the oven and baking sheet, and preheat the oven to 350°F.
Cover a baking sheet with parchment paper and spray with PAM.
Combine chili powder, cumin, and red pepper flakes in a small bowl.
Add your brown sugar to the spice bowl, and stir to combine.
Trim boneless, skinless chicken breasts into approximately 1-inch bite-sized pieces.
Cut thin-cut bacon strips in half. Take one piece of bacon and wrap it around a piece of chicken, securing it with a toothpick. Make sure the bacon is long enough to wrap around the chicken entirely.
Roll each bacon-wrapped chicken bite in the brown sugar and spice mixture, ensuring a generous coating.
Line them up on your prepared baking sheet. Remember, there’s never too much coating!
Bake in the oven for 35 minutes or until the bacon is crispy and the chicken is cooked.
